Ambur Star Biriyani

From the Arcot region of Tamil Nadu, Ambur Biriyani uses Seeraga Samba rice (a short-grain aromatic rice) instead of Basmati. It produces a distinct texture and flavor profile, often served with a spicy brinjal curry (Ennai Kathirikai).


Master Recipe

1. Soak Seeraga Samba rice.\n2. Make a paste of red chilies and garlic.\n3. Cook mutton with the paste, yogurt, and tomatoes.\n4. Add water to the gravy and bring to boil, then add the soaked rice.\n5. Cook until water is absorbed, then dum for 20 minutes.
