Kashmiri Biriyani

Kashmiri Biryani is a unique blend of Muglai and Kashmiri cuisine. Often using asafoetida instead of onions and garlic, and characterized by the use of dry fruits and nuts. It is slightly sweet and very aromatic, often using fresh fruits like apples or pineapple in some variations.


Master Recipe

1. Marinate mutton with fennel powder, ginger powder, and yogurt.\n2. Sauté whole spices in ghee and cook the meat.\n3. Boil rice with saffron.\n4. Layer meat and rice, adding raisins, cashews, and almonds between layers.\n5. Pour milk with saffron on top and cook on dum.
