The most famous biriyani in the world, originating from the kitchen of the Nizam of Hyderabad. It is a "Kacchi" biriyani, meaning raw marinated meat and partially cooked rice are layered and cooked together, allowing the flavors to intermingle perfectly.
1. Marinate mutton overnight with yogurt, papaya paste, fried onions, mint, coriander, and spices.\n2. Boil basmati rice with shah jeera until 50% cooked.\n3. Layer raw marinated meat at the bottom of a heavy handi.\n4. Layer the rice over the meat.\n5. Add saffron milk, ghee, and fried onions. Seal and dum cook for 45 mins.
