Dhaka Kacchi Biriyani

A staple of Old Dhaka, Bangladesh. "Kacchi" means "raw", referring to the method of cooking raw meat with rice. It is similar to Hyderabadi but often uses mustard oil and typically beef or mutton.


Master Recipe

1. Marinate meat with yogurt, ginger-garlic, and spices.\n2. Deep fry potatoes.\n3. Wash and soak chinigura or basmati rice.\n4. Layer raw meat, potatoes, and rice.\n5. Add prunes (aloo bukhara) for a unique tart sweetness. Dum cook.
